Lemon Bars

Ingredients

  • 1 1⁄3 c Flour divided
  • 1⁄3 c conf sugar
  • 1⁄2 c margarine
  • 2 eggs
  • 1 c sugar
  • 1⁄2 t baking powder
  • 3⁄4 c flaked coconut
  • 1 T lemon juice
  • 2 t lemon peel grated

Instructions

1. Combine 1 c flour with conf sugar
2. Cut in margarine
3. Press into 9x9 pan
4. Bake crust at 350 for 25 minutes
5. Meanwhile beat eggs with sugar
6. Mix 3T flour with baking powder and add remaining ingredients
7. Pour over crust Bake at 325 for 25 minutes until edges turn brown.
8. Sprinkle with conf sugar.
